			<content:encoded><![CDATA[<p>It’s time to put the rake down, take the gardening gloves off, and pay heed to the distant sounds of “Mom, I’m bored”&#8230;I know, you become de-sensitized to it after a while, but in these beautiful days of spring with the promise of summer, you just gotta get out there and enjoy this city!</p>
<p>For those that think things only start happening when school lets out, please let me dispel that myth.  Fredericton is a veritable treasure trove of things to do – year round! But my personal favourite time of year is NOW&#8230;the time where you know what’s coming because the weather gives you lovely, warm snippets of it every now and then&#8230;too cool yet to get out the slip n’ slide, but warm enough to bask, like my lazy cat Ginger, in the sun.</p>
<p>So here’s a few ideas to take you away from the chores (guess what? The chores will always be there, but your kids won’t!), first, find a public park. Did you know that in Fredericton alone, we have 138 parkland locations, totalling 900+ hectares of green, treed space for public use?  I don’t know about you, but that is a lot of park space to do a “gazillion” things.  Here some of my fave things to do with my kids (psst: and it’s free!)</p>
<p>Find a Frisbee, football, soccer ball (any round-ish object that can be propelled!) &#8211; while at the park, ask other kids there if they’d like to join in!</p>
<p>Bring other items like skipping ropes, hoola hoops etc and have a relay</p>
<p>Lay down on the grass and gaze at the clouds or enjoy the view!</p>

<p>Go geocaching! Fredericton Tourism has a great geo-caching tour, and you can earn some <a title="Cool Trinkets" href="http://www.tourismfredericton.ca/en/thingstodo/Geocaching.asp" target="_blank">cool trinkets </a>or the more <a title="Geogaching" href="www.geocaching.com" target="_blank">general</a>. It is literally a big treasure hunt and kids (and big kids) LOVE it! We happened upon a “pocket full of fiddleheads” on our last geocaching outing&#8230;what a bonus!</p>

<p>Oh and did I mention waterfalls?  This merits a whole other section, folks.  These hidden gems (and believe me, some more hidden than others) are breathtaking, and makes you appreciate this amazing area that we happen to live in! </a>This spring/summer though, the kids and I and our intrepid adventurer dog, Toby will be seeking out the elusive <a title="Coac Falls" href="http://waterfallsnewbrunswick.ca/?p=415" target="_blank">Coac Falls</a> near Nackawic .  We tried last fall to locate it but without success.  Being stubborn but also (as I’ve mentioned in previous blogs) a scenic view junkie, we will venture out again to find it.  The next blog post will have pictures of this waterfall as proof of my tenaciousness (otherwise known as stubbornness!).  Looking for a challenge?  Please post any pics of this waterfall – and gloating is allowed!</p>
<p style="text-align: left;">Spring brings with it its share of rain, and if you aren’t into puddle-jumping, why not opt for some indoor things to do?  Show the kids how cool old buildings can be (and some more learning, Mom!) by visiting the <a href="http://www.gnb.ca/legis/index-e.asp">NB Legislative Assembly</a>.  Right now their doors are open Mon-Fri, 9am-4pm, but come mid June, free guided tours will be offered daily.  While there, check out the chandelier&#8230;it’s pretty sturdy now, but it did come crashing down in 2002. Diane Mercier-Allain, who holds all the knowledge of this magnificent building can recount this tale in full detail!</p>

<p>Another great historic landmark is <a href="http://www.tourismfredericton.ca/en/tourism/businessDetails.aspx?id=853">Government House</a>. Located on Woodstock Road, this National &amp;  Provincial Historic site is the official residence to our Lieutenant-Governor, Graydon Nicholas (if the blue flag is flying, it means the Hon. Graydon Nicholas is in residence).  The building itself is a treasure trove of NB artifacts and art.  Free guided tours available from 10am-5pm Mon-Sat, 12pm-5pm Sun.</p>

<p>So it is still raining out, no problem!  There is lots to keep kids occupied in Fredericton!  If you love hands-on learning, <a href="http://www.scienceeast.nb.ca/home.asp">Science East</a> is the best way to teach kids about momentum, optical illusions and more!  The building has historical significance too, being the county gaol (jail) up until 1996.</p>

			<content:encoded><![CDATA[<p>“It’s like a magic trick!” exclaims my friend Karen as Melvin Nash pulls away last year’s dried grass to expose rich green fiddleheads poking through the earth.  It’s an overcast Friday morning in early May and we are standing in a field just off highway 105 between Fredericton and Jemseg. We are on the hunt for that great New Brunswick delicacy: the fiddlehead.   For two to three weeks each spring the furled fronds of young ostrich ferns are a common site at farmers’ markets, roadside stands and on the tables of the best local restaurants.  While it’s easy enough to find fiddleheads for sale, we opted for hands on experience.  We ended up with about 25 pounds of fiddleheads.  Not bad for a couple of hours of leisurely foraging.</p>
<p>Melvin Nash has literally <a title="Melvin Nash Cooking " href="http://www.amazon.ca/Cooking-Americas-Finest-Gourmet-Fiddleheads/dp/B005ONPM9M/ref=sr_1_2?s=books&amp;ie=UTF8&amp;qid=1368716115&amp;sr=1-2" target="_blank">written the book </a>on fiddleheading and he very generously offered to spend his day sharing his knowledge with three fiddlehead rookies.    </p>
<p><strong>Where to go?</strong>  Fiddlehead fanatics can be quite protective of their best foraging spots but there’s some very obvious locations –  think about the areas where you typically see ferns growing in the summer such low lying fields, shady glens and river banks.</p>
<p><strong>When to go?</strong> “When the dandelions begin to bloom it’s time to start looking for fiddleheads,” says Melvin.   The season typically lasts for only a few weeks and fiddleheads grow fast so if you see some the right size don’t wait to pick them.</p>
<p><strong> What to bring? </strong>It’s pretty low-tech &#8211; if you have hands and some pockets you can get yourself a little haul.  But Melvin prefers to use a knife to make a cleaner cut.  He also uses beautiful traditional baskets made by Vincent Bear of Tobique First Nation.  The ultimate in form meets function, the baskets went right into the stream when it came time to soak and rinse the fiddleheads.</p>
<p><strong>How to harvest? </strong>You’re looking for deep green, tightly furled ferns.  They can be a couple of inches to several inches in length.  The stalks are flavourful too so don’t just pick off the tops.  You want to snap or cut close to the crown while being careful not to cut into the crown. Each plant can have several rings of growth so if you harvest the first ring of fiddleheads off a plant without damaging the crown, you could come back and get the next round of growth in a few days.</p>

<p><strong>How do I not poison myself? </strong> In matters of foraging this always seems to be the number one concern-how to be sure you don’t pick the wrong thing.    Melvin very helpfully pointed out the other common ferns that you’d do well to avoid.  Once you’ve seen them alongside the edible ostrich fern fiddleheads, it’s really easy to tell the difference. </p>

<p>Most sources will tell you that there is a natural toxin in raw fiddleheads so never eat them uncooked.  However at the risk of upsetting Health Canada and my mother, I can tell you we all tried raw fiddleheads on Friday with no ill effects.</p>
<p><strong>Cleaning<br />
</strong>Once we’d filled our baskets, Melvin showed us the secret to cleaning fiddleheads.  We stopped along the river and Melvin spread out a tarp.  He grinned enigmatically as we tried to guess the various winnowing techniques he might teach us.  Turns out it was much simpler.  He simply raised the basket over his head and shook the fiddleheads onto the tarp.  That was it.  Like magic the dried brown papery bits and the green fiddleheads separated themselves into two piles.</p>

<p>“Could have used more of a breeze,” shrugged Melvin.  But we were impressed as we gathered up the fiddleheads for step two of the cleaning process.</p>
<p>As with a lot of wild foods, debate rages around the proper cleaning and handling of fiddleheads.   Melvin maintains that the ill-effects people fear in fiddleheads are more than likely introduced by rinsing them in less than clean water sources.</p>
<p>To rinse and cook our fiddleheads, we headed to the home of David and Carol Ray of Estey’s Bridge northwest of Fredericton.   A clean, swift stream full of trout and salmon runs through their backyard.  We lugged our haul down to the water and into the stream the baskets went to soak for a few minutes. Then we put a small amount of fiddleheads in one basket, scooped it through the stream to fill it with water and turned the basket back and forth shaking out the water and rinsing away debris.  </p>

<p>If your kitchen is not equipped with tarps and streams, a good rinse in the kitchen sink and rubbing away any brown bits should do the trick.</p>
<p><strong>Cooking Fiddleheads<br />
</strong>We headed back to Carol and David’s kitchen for a classic “feed” of fiddleheads.  Cover the fiddleheads with water in a pot and bring to a boil for seven minutes (again with apologies to Health Canada, Melvin insists that the recommended 10 minutes is too long if you want a proper tender crisp fiddlehead.) Drain. Let a large hunk of butter melt over them.   Plate them up and add a drizzle of vinegar. </p>

<p>This is the most simple and delicious way to enjoy them.  But it’s far from the only way.</p>
<p>“Fiddleheads are the taste of spring,” says Chef Lizzie Stewart as we stand in her kitchen at <a title="The Blue Door" href="http://www.thebluedoor.ca/index.html" target="_blank">Fredericton’s Blue Door Restaurant and Bar</a>  a few days later.   With Chef Stewart at the helm in the kitchen, the Blue Door was named one of the <a title="Top 50 Restaurants" href="http://www2.macleans.ca/2012/09/27/50-best-restaurants-in-canada/" target="_blank">Top 50 restaurants </a>in Canada by Macleans in 2012. </p>

<p>During the short fiddlehead season, she has been coming up with creative ways to feature the delicacy which have included tempura battered fiddleheads and a fiddlehead and baby octopus salad.</p>
<p>Chef Stewart’s love of local ingredients and her philosophy to “let food be food” has made The Blue Door one of my favourite spots in Fredericton and I was eager to get into the kitchen with her to work on a fiddlehead dish.   The result didn’t disappoint: blanched fiddleheads, roasted cherry tomato, baby arugula and pickled red onion tossed with the house dressing of macerated shallot and herbs  and topped with soft shavings of au Fond du Bois goat cheese.  This simple salad was served with a perfectly seared Digby scallop, a chickpea battered Beausoleil oyster and a slice of candied pancetta.   It was a little plate of local food heaven.  </p>

<p>The music festivals continue to unveil their artists and the latest announcement comes to us from <a title="FredRock2013" href="http://www.fredrockfest.com/" target="_blank"><strong>FredRock 2013</strong></a> with <strong>Big Wreck</strong>, <strong>Classified</strong>, <strong>The Reason</strong>, and <strong>Age of Days</strong> being adding to their previously released line-up of <strong>City and Colour</strong>, <strong>Buckcherry</strong>, <strong>K-OS</strong>, <strong>Monster Truck</strong> and <strong>Hollerado</strong>. The 5<sup>th</sup> annual <strong>FredRock</strong> music festival has expanded to 3 days being held August 9-11 on the Fredericton Loyalist Rugby Grounds. Check out their latest additions:</p>

This hard rock band from Boston, lead by Canadian Ian Thornley, is currently touring Canada opening for Motley Crue!  You can expect them to rock hard and bring lots of energy.</p>

<p>Let’s start with Friday and kick off the weekend with an early show at the newly renovated Wilser’s Room (The Capital Complex) where Moncton&#8217;s <a title="The Backyard Devils" href="http://www.thebackyarddevils.com/" target="_blank">The Backyard Devils</a> will be bringing their hillbilly extravaganza to town for one night only! With their first album under their belt and 3 Music NB Awards (Emerging Artist, Album of the Year and Group Recording of the Year) the Backyard Devils are now taking their foot stomping music all over the globe! Opening the night is Fredericton’s own <a title="Sissy and the Hobos" href="http://sissyandthehobos.bandcamp.com/" target="_blank">Sissy &amp; the Hobos</a> who are fresh off of recording their first studio album. This 5 piece roots band combines the sounds of traditional folk/country mixed with an ounce of blues and of course the fresh taste of Appalachia to top it off. Show starts at 8:00.</p>

<p>Late night Friday the Capital Complex will play host to<a title="The Belle Comedians" href="https://www.facebook.com/TheBelleComedians " target="_blank"> The Belle Comedians </a>who describe themselves as “<em>Melodic folk rock from Fredericton with a lot of heart, some drunken bravado and more than enough melodies to keep their hybrid sound afloat.”</em> They will be sharing the stage with <strong>Danger Cat</strong> from Moncton.</p>

<p>Saturday night is offering you celebrations, fundraising and opportunity to lend your support.</p>
<p><a title="Ross Neilsen" href="www.rossneilsen.com" target="_blank">Ross Neilsen</a> is putting on a splash in celebration of his newest CD which was recorded in Louisiana this past January. The York Street Train Station will be the location for an exclusive dinner experience complete with food, drink, entertainment and your own copy of the new album to take home! The band will be serving a 3 course meal complete with imported chicken straight from Louisiana! and desserts provided by Hot Lollies! Wine and Picaroons will be served and once your hunger and thirst have been satisfied the band will cap the night with a live performance of the album. The fun starts at 7:00pm. <p><span style="color: #000000;">Atlantic Canada&#8217;s Premier Show Band, playing favorites of American R&amp;B, Funk and Soul music, </span><span style="color: #000000;"><a title="The Mellotones" href="http://nbmediacoop.org/ai1ec_event/mellotones-in-concert-a-fundraiser-for-fredericton-food-bank/?instance_id=" target="_blank">The Mellotones</a> will be performing at Student Union Building, UNB to raise funds for the Fredericton Food Bank. Proceeds go towards the Cob Oven Project &#8211; the oven will be used during annual fundraising events for the Food Bank. The Fredericton Food Bank distributes food hampers to over 900 families per month! Get out and dance the night away while supporting a very worthy cause!</span></p>

These five young guys will entertain you with their variety of covers ranging from the classics to brand new chart toppers. Coming to us from Charlottetown, they know how to captivate any audience and they always leave people smiling!</span></p>

<p>Each spring when the summer workshop <a title="edVentures schedule" href="http://www.edventures.ca/en/workshops/schedule.asp" target="_blank">schedule</a> comes out, I feel like a kid planning for summer camp again!  Last summer I had the chance to fit in a day of jewelry making with Trudy Gallagher, the design force behind <a title="Bejewel" href="www.bejewel.ca" target="_blank">Bejewel. </a>I ended up with a custom pendant that was much nicer than any lanyard or friendship bracelet from my childhood summer camps! You can read all about my edVenture <a title="Glad Girl edVenture" href="http://www.thegladgirl.com/2012/07/an-awfully-big-edventure.html" target="_blank">here.</a></p>

<p>There are many amazing live music experiences planned for September’s festival meaning I cannot possibly cover them all right here, right now however here is a sampling of what’s in store!</p>

<p>The legendary reggae band <strong>The Wailers</strong> are playing the early Saturday night show in the Blues Tent show. The band was originally formed in 1969 Their nucleus formed in 1969, when Bob Marley, Bunny Wailer, and Peter Tosh recruited the Barrett brothers &#8211; bassist Aston &#8220;Family Man&#8221; and drummer Carly &#8211; from Lee Perry&#8217;s Upsetters to play on hits such as Lively Up Yourself, Trenchtown Rock, Duppy Conqueror, and many more besides. Inspired by Rastafari and their ambitions of reaching an international audience, this is the line-up that pioneered roots rock reggae, and signed to Island Records in 1971. Bunny and Peter left two years later. Iwith Bob Marley,  Bunny Wailer, Peter Tosh and the Barrett brothers &#8211; Aston and Carly.  Inspired by Rastafari and their ambitions of reaching an international audience, this is the line-up that pioneered roots rock reggae, and signed to Island Records in 1971. I have no doubt that this show will be epic!</p>

<p>One of my personal highlights from last year’s festival was the <strong>Avett Brothers</strong> performance with their ‘<em>songs that sing to the heart, that dance with the soul’</em> so I’m thrilled to see them headlining the Blues Tent on Thursday night.</p>

<p>Friday night Blues tent will feature an early show with <strong>Warren Haynes</strong> and <strong>Gordie Johnson</strong>, followed by a full <strong>Gov’t Mule</strong> show and topped off with <strong>Big Sugar</strong> in the afterburner show. You can expect to see members of both bands to make guest appearances at each other’s shows. There will be a lot of rockin’ here!</p>

<p><strong>JJ Grey &amp; Mofro</strong> just recently released a new album and have received much praise for it. Here is what the New York Times had to say about them “<em>Impassioned singing, riff-based Southern rock, cold-blooded swamp funk and sly Memphis soul</em>.” Wednesday night in the Blues Tent will be special!</p>

<p>Amelia’s acclaimed 2009 album <em>Hunter, Hunter</em> won her the much sort after Juno Award for Best Roots and Traditional Album.  Her latest album, <em>Spectators</em>, was released in October 2012 and she is happy to come share it with us in her first appearance in Fredericton in over a year.</p>
<p>Amelia Curran was born to write music, a songwriter by trade, but a writer at heart, she believes language is everything.  &#8220;&#8230;Amelia Curran’s success comes from her ability to write for the common man is his own language. Refusing to mask her pain, her fears or her anger behind cleverness, Curran presents her words like a bartender presents a shot. It’s done for function and immediacy, not to fool your taste buds or numb your senses&#8221;</p>

They’re so excited for the Easter Egg Scavenger Hunts, the Easter Brunches and (who are we kidding) the loads of chocolate! And now, as we’re inching closer and closer to Easter weekend we’re starting to plan for what’s going on in Fredericton Easter Weekend.</p>
<p>Well we’ll start off the weekend with all the chocolate fun (ok&#8230; I’m craving it too!). There’s a number of Scavenger Hunts taking place in Fredericton.</p>
<p>The Easter Bunny will be at the <a title="Fredericton Farmers Market Facebook Page" href="https://www.facebook.com/FrederictonFarmersMarket" target="_blank"><strong>Fredericton Farmers Market</strong> </a>for their <strong>Easter Market Scavenger Hunt</strong> on Saturday between 9 – 11am. Bring your little ones (up to 10 years old) for a free scavenger hunt in the market, take a picture with the Easter Bunny and pick up everything you need for Easter Weekend! To participate, simply call the market office at 506-451-1815 and leave a leave a message indicating the number of children who will be participating.</p>

Entering its 28<sup>th</sup> year, this free event will take place Saturday at 12noon and is open to kids 12 years and under. The day begins with the Easter Egg Hunt at 12pm, followed by an Easter Hat Contest (12:15) and Perley the Magician will be on-hand at 12:30pm for a Magic Show in the lodge.</p>
<p>So, after you’ve stuffed yourselves with chocolate why not work it off on the slopes at <strong>Crabbe Mountain</strong> by enjoying a day of skiing before they close for the season on Easter Monday. 			<content:encoded><![CDATA[<p>Since I first tried <a title="Crepe Suzette" href="https://www.facebook.com/CrepeSuzetteCreperie" target="_blank">Crepe Suzette </a>in January, this charming and bright Downtown Fredericton eatery has quickly shot to the top of my list for a weekend girls’ brunch. (They’re take on Eggs Benedict served on buckwheat pancakes is a must try).  And judging from the packed house during my last brunch there a few weeks ago, I’m not alone.  Other friends have made it their go-to spot for a mid-day latte of London Fog.  <a href="http://blog.tourismfredericton.ca/wp-content/uploads/2013/03/Crepe-Suzette-Soup-du-Jour.jpg"><img class="alignright  wp-image-789" title="Crepe Suzette - Soup du Jour" src="http://blog.tourismfredericton.ca/wp-content/uploads/2013/03/Crepe-Suzette-Soup-du-Jour.jpg" alt="Crepe Suzette - Soup du Jour" width="213" height="286" /></a>Given that they’re solidifying themselves as a great brunch or lunch spot, I was interested to see what they’d come up with for their <a title="Dine Around Freddy" href="http://www.DineAroundFredericton.ca" target="_blank">Dine Around Freddy</a> dinner menu.</p>
<p>I started with the <strong>soup du jour</strong> (Roasted Cauliflower and Cheddar) but you also have the option of the <strong>Avocado Bruschetta.  </strong>Both are light options &#8211; I actually would have been okay with a cup of the soup rather than a large bowl as a starter – which is good because the main is a plateful. <img class="size-full wp-image-787 alignleft" title="Crepe Suzette - Chicken Rollatini" src="http://blog.tourismfredericton.ca/wp-content/uploads/2013/03/Crepe-Suzette-Chicken-Rollatini.jpg" alt="Crepe Suzette - Chicken Rollatini" width="250" height="229" /><br />
The main is a <strong>Stuffed Chicken Breast wrapped in a Crispy Crepe smothered in a Rosée sauce and topped with Parmesan. </strong>It’s served with <strong>Sweet Potato Crunch and Ginger Sesame Green Beans.  </strong>The crepe is huge and I can almost guarantee you’ll be taking left-overs home.<br />

<p>It’s not the boldest or most ambitious Dine Around menu – there’s only one entrée option and one dessert option.  But if you want to show a little love for a Fredericton newbie, give them a try!</p>
<p><strong>Pairs well with:</strong>  A day at the galleries – from the Beaverbrook Art Gallery to private galleries like <a title="Ingrid Mueller`s Art Gallery" href="http://www.artcontact.ca" target="_blank">Ingrid Mueller’s</a> or <a title="Gallery 78 Fredericton" href="http://gallery78.com/" target="_blank">Gallery 78</a>, Fredericton offers a feast for the eyes.  Don’t forget to check out the emerging talent at the <a title="NB College of Craft &amp; Design" href="http://www.nbccd.ca/en/home/eventsandsocialmedia/eventdetails.aspx?ec=bW9kZT0zJmV2ZW50PTcyJmR0PTIwMTMwMzE0JmNhdElEPQ" target="_blank">NB College of Craft and Design.</a></p>
